Method

By choosing gentle extraction methods such as pump overs and soft pressing we maximise fruit character and moderate tannin expression. Low yields and harvest timing have rewarded us with a concentrated and balanced wine brimming with in bright fruit and depth.
 

Results

A delightful expression of all that is great about the Heathcote Shiraz flavour profile – mixed red and black fruits, black cherry, plums & white pepper. The plush juicy palate, incorporates French toasty oak spice and slight Vanilla. A fruit forward wine with a full structured finish of balanced, approachable tannins.

 

Conclusion

The Heathcote terroir is sought for the robust structure, inherent flavors and spiciness it imparts in Shiraz. It is, for this reason, we can keep our winemaking intervention simple, letting the red soil do the talking in our full-bodied, silky-smooth Shiraz.
