Fermented at low temperature to maximise fruit potential and aromatics. We purposely don’t ferment to full dryness because that’s the way, ah-hah, ah-hah, we like it, ah-hah.
Our warmer climate twist on the traditional. Think Sauv Blanc with a tropical undertone. Lively and aromatic with gooseberry, white peach and stone fruit flavours. Off-dry with juicy acidity for a full, round finish.

Winery notes Gentle press, cool ferment using selected yeast and stopped early to retain a small amount of natural sugar. Maturation on light lees in stainless steel.
