Produced in an early drinking style, through cold soaking of the grapes prior to ferment & using gentle pump overs during fermentation (to lower the intensity of tannin extraction). Further use of whole berries, rather than crushed, in fermentation helps yield a plush, juicy, fruit-forward wine with fine tannins.
Our 2022 vintage highlights the Heathcote flavor profile – red and black fruits, black cherry, Plums & white pepper. The soft, juicy palate, incorporates French toasty oak spice, nut and slight Vanilla. An approachable wine with a full, round finish.
The Heathcote terroir is sought for the robust structure, inherent flavors and spiciness it imparts in Shiraz. It is, for this reason, we can keep our winemaking intervention simple, letting the red soil do the talking in our full-bodied, silky-smooth Shiraz.
