Method

Produced in a ‘drinks well young’ style, due to cold soaking of the grapes prior to ferment (to lower the intensity of tannin extraction) & whole berry fermentation to yield a plush, juicy, fruit-forward wine with soft tannins.

Results

Our 2021 vintage highlights the Heathcote flavor profile – red and black fruits, Mulberry, Raspberry and Pepper. The soft, juicy palate, incorporates French toasty oak spice, nut and slight Vanilla. An approachable wine with a full, round finish.

Conclusion

The Heathcote terroir is sought for the robust structure, inherent flavors and spiciness it imparts in Shiraz. It is, for this reason, we can keep our winemaking intervention simple, letting the red soil do the talking in our full-bodied, silky-smooth Shiraz.
